Apples, apples apples - apple cake

With all the apples that I blagged in Autumn, one of my surprising favorites was the apple cake. Not a great fan (so so I thought) of apple cake, apple pie, apple crumble. This was such a great cake. Thank you Mary B!

What you need:

  • 225g self-raising flour
  • 1 level tsp baking powder
  • 225g caster sugar
  • 2 large eggs
  • ½ tsp almond extract
  • 150g butter, melted
  • 250g FREE apples, peeled and cored (taste better when they are free)
  • 25g flaked almonds

What to do:
  1. Turn on the oven at 160
  2. Grease a 20cm loose-bottomed cake tin
  3. Put the flour, baking powder, sugar, eggs, almond extract and melted butter into your bowl and mix (Kitchen Aid beater)
  4. When it's mixed well, add half to the tin
  5. Layer the sliced apples on top, concentrate in the middle rather than edges (get burnt and squide out otherwise)
  6. Layer the rest of the mixsure on top carefully, making sure it's all covered
  7. Sprinkle with the almonds (this was the bit I wasn't sure of, but it's really good)
  8. Bake in the pre-heated oven for 1¼ - 1½ hours
