Easy pasta sauce (puttanesca)

½ was at day 2 of school today. And when she came home I had this easy pasta sauce prepared ready for us. She was famished after day 1 of school and scoffed down all her Pizza Express children's menu and then went home and ate almost all my fruit!

This really is an easy and very tasty sauce, and stuff of store cupboard! This is enough for 4, so you can  put what you don't use in tupperware in the fridge for a few days until you eat it again!

What you need

  • 50g tin of anchovies
  • 2 crushed garlic cloves
  • tin of chopped tomatoes
  • 200g olives (stoneless)
  • 2 tablespoons capers (drained)
  • Pasta for 1½ (spaghetti is best)
What to do
  1. Drain the oil from the anchovies into a large pan
  2. Add the garlic and fry for a minute
  3. Add the tomatoes, bring to boil and then simmer for 10 mins
  4. Add some freshly ground pepper - no salt needed I think as the anchovies are pretty salty
  5. Cook the pasta
  6. Add the olives and capers to the sauce for last few mins
  7. Strain pasta and reserve some of the water in case you need it to loosen up the pasta
  8. Add the sauce to the pasta in the pasta pan and add water to it if needed
