Delicious shin of beef

With it getting cold and darker earlier it was time to start the cheap cut of meat in the slow cooker. I had a load of carrots that needed eating as well so it worked out very well and very tasty!

What you need
  • A slow cooker ideally
  • 1/2kg of beef shin in reasonable bite sized pieces and the really fat bits removed
  • A small amount of flour and mustard powder mixed together
  • 2-3 onions peeled and halved
  • A bunch of carrots peeled and chopped in big chunks
  • 2 bay leaves
  • Handful of thyme
  • A pint of beef stock

What to do

  1. Lightly coat the pieces of beef in the flour/mustard and add to slow cooker
  2. Add the vegetables
  3. Add the herbs
  4. Add the stock
  5. Cook for 6 hours or more
  6. Serve with a large dollop of horseradish
