A quick after school healthy dinner - but after school was 11.50am!

Well, this was after school. But for ½ school today finished at 11.50am and we had pasta for lunch. Then after playing restaurant lady, shop lady, bus driver and sisters we went to the park. Back home for dinner we had a lovely honey and soya sauce duck stir fry with rice. I had the bonus of shitake mushrooms and chicken that was in the freezer - the bag ripped when I was getting the duck pieces out for the stir fry. (½ isn't keen on shitake mushrooms, so needed an alternative).

What you need
  • Some strips of duck (I have them bagged up in the freezer for handiness)
  • Half a red pepper cut to shreds
  • 3 mushrooms sliced
  • ½ a teaspoon of honey (runny)
  • Splash of light soya sauce
What to do
  1. Heat a wok or frying pan and add a splash of oil (rapeseed here, but whatever you have is fine)
  2. Add the duck and cook for 3 mins
  3. Add the pepper and mushrooms
  4. Cook for 1 minute
  5. Add the honey and splash of soya
  6. Then add some water, around 2 tablepoons
  7. Cook for 4 mins
  8. Serve with plain rice (I have an old rice cooker, so it's really easy)
