Chicken and sweetcorn soup - super fast

This is really simple and I think delicious. I just had to remember to get out some roast chicken that I froze after our roast dinner on Sunday.

What you need

  • Some cooked chicken in bite sized pieces
  • Tin of creamed sweetcorn
  • 150ml water
  • 1 egg - whisked
  • Some cornflour
  • Splash of Shaohsing cooking wine (optional)
What do to
  1. Boil the water and creamed sweetcorn
  2. Add the chicken and cook for 2 mins
  3. Add a splash on Shaohsing if you're using it
  4. Thicken with cornflour
  5. Add the egg and mix lightly
  6. Turn off the heat and serve in bowls after a minute
