Lomo Saltado

I forgot about this Peruvian stir fry dish. Simple and just a little different from the usual honey soy ginger stir fry concoction I make.

What you need

  • Some frying steak cut into strips
  • A little bit of red wine
  • Dried oregano
  • A garlic clove chopped
  • A sliced red onion
  • Half a red pepper sliced
  • A tomato sliced
  • A small potato peeled and cut into strips
  • Some sherry vinegar

What to do

  1. Marinate the beef in red wine and dried oregano for about 20mins
  2. Heat your wok/ frying pan and add olive oil
  3. When hot add the potatoes and cook and until golden. Then remove from the pan.
  4. Fry the onion for 2 mins
  5. Add the beef and garlic and cook for 4 /5 mins
  6. Add the potato, pepper and tomato and cook for another 3/4 mins and add a splash of sherry vinegar
  7. Serve with rice. I had some parsley so for once in my life I added a garnish!
