PICNIC - first of very many

With the change in weather it is of course time to picnic. ½ loves eating in the garden, means she doesn't have to clean the table after meals! We picnic on the grass and are lucky enough to have a deck as well as patio so we can even eat at a table outside! But a quick and easy one after work (that doesn't involve sandwiches) is some chicken legs (in the oven on a day a work from home, so cool by the time to eat), chopped tomatoes, pepper and carrot, and sliced beetroot with feta crumbled. Oh, and some new potatoes (cold) from dinner the previous night.

Recipe for chicken legs

What you need

  • A pack of chicken drumsticks/legs
  • Juice of  a lemon
  • 2 garlic cloves
  • 1 desert spoon honey
  • 1 teaspoon mustard (grain)

What to do

  1. Mix it all up with and leave to marinate.
  2. Cook in the oven at 190 for 30 mins
  3. Check it's cooked through and then eat, or cool and then eat!
