Pretend paella

I was out for dinner with friends the other night and had paella which I haven't had for ages.
This inspired me to make my own pretend version for tea tonight. I had some chicken in the freezer which I butchered a couple of weeks ago but no frozen peas so I picked up a pepper at lunchtime.

What you need
  • A chicken thigh and leg
  • Small chopped onion
  • 2 cloves of garlic chopped 
  • 70g paella rice
  • Carton of chopped tomatoes
  • Half a red pepper chopped in big chunks 
  • 500ml chicken stock
  • Some mixed herbs
  • Pinch of saffron strand

What to do
  1. In a large pan add some olive oil and fry the meat
  2. When brown push to the side and add the onion and garlic and fry until golden
  3. Add the rice and give a good mix
  4. Add the tomatoes and saffron and a tea spoon of herbs
  5. Give it all a good mix together
  6. Then add about 3/4 of the stock and season, and give another good mix
  7. Turn the heat right down and leave it for about 15m
  8. Keep an eye on it to make sure it doesn't burn
  9. After about 15m check it and add the rest of the stock and peppers
  10. Cover with a lid and cook very low for about another 10 mins
  11. If you have frozen peas and want to add do that now
