Favorite dinner - bacon and egg fried rice

½ loves rice. One of her favorite meals is egg fried rice with bacon, peas and sweetcorn. In fact when we were on holiday in Portugal last year she said she wanted to go home and eat it!
Today was a crazy party day and I ate last nights cold curry for breakfast, which in hindsight was not a good idea. So it was bacon and egg fried rice with peas and sweetcorn.

What you need
  • Cooked rice (I have a rice cooker which makes perfect rice. Ideally the rice is leftovers from the night before as it's easier to fry) - 1 cup of uncooked 
  • An egg 
  • 1 or 2 rashers of bacon cut to bite size pieces 
  • A bowl of frozen peas and sweet corn
  • Soya sauce (light)

What to do
  1. Fry the bacon until cooked and a little crispy
  2. Remove from pan
  3. Fry the egg until cooked through then add the rice and stir 
  4. Add a small dash of soya sauce and give a good stir
  5. Add the bacon and frozen veg and stir and cook for about 6-8mins until the veg is all cooked
  6. Serve as is. Sometimes I have it with tomato ketchup!
