Comfort food for cold April day

I had some bacon and cream in the fridge that needed using up, and being such a Wintery April day I made us Spaghetti carbonara for tea. It's one of our favorites, but not that great on the cholesterol!

What you need:
  • Pasta for 1½
  • A cup of frozen peas
  • At least 2 rashers of bacon (or more if it needs using up) - chopped into small pieces
  • 100ml double cream (you can use a creme fraiche combo if you want)
  • 40g parmesan finely grated
  • 1 egg yolk
  • Pepper
  • A knob of butter
What to do:
  1. Cook the pasta and throw in the peas with 5 mins to go
  2. Fry the bacon until crispy then turn off the frying pan
  3. Mix the cream, egg yolk and parmesan together and add some black pepper
  4. Drain the pasta and peas when done and tip back into the saucepan 
  5. Add the butter to the pasta and peas and give a good mix
  6. Add the bacon and the sauce and give a good mix - the residual heat will cook the egg, if you a re freaked you can always put the lid on the pan and gently warm it through more
