'Pot noodles'

½ was very exited that we were meeting her pals in the park after lunch. So much that she told me are 11.30am that she was hungry and wanted lunch (we were meeting at 1.30pm). She loves rice and glass noodles and they are really handy and easy to make

Today's lunch was the River Cafe inspired pot noodles.

What you need
  • Noodles - I used a glass noodle and rice noodle combination - enough for 1½
  • Stock cube - veg or chicken 
  • Boiling water from kettle
  • A small carrot or snap a half of one - peel and then peel the carrot so it's thin shavings
  • 3 leaves of a leafly green like spring greens - remove the hard stem bit and then chop into thin shreds 
  • Some green beans / sugar snaps/ mange tout - chop into smallish bits
  • Half a red pepper - sliced
  • Juice of half a lime

What to do
  1. Put the noodles in a bowl and cover with boiling water - leave for about 5 mins until they are soft
  2. Make up the stock cube with about 300ml of boiling water
  3. Chuck the vegetables into the hot stock and cover
  4. When the noodles are soft drain and add to the stock
  5. Serve in bowls and add lime juice to taste (½ isn't too keen on lime or lemon, but I could drink the stuff!)
This would be nice with some fresh chilli or coriander.
