Easy slow cooked beef shin

I love the cold weather, great excuse for slow lovely slow cooked cheap cuts. Today it was beef shin.
  • Beef shin (cut into bite sized bits and then seasoned with ground pepper and mustard powder)
  • Carrots (big-ish bits)
  • Potatoes (sliced for the big ones, left some smaller ones whole)
  • Onions (sliced)
  • Garlic (crushed)
  • Celery (chopped smallish, but that's because it was the last bits of it)
  • Mushrooms (because there were some hanging out in my fridge)
  • Stock cubes (I still use the Kallo low salt ones, a hang up from BLW my now 3.7yo) - make about 1 cup of stock
  • Glass of red wine (yes, I was the one in Tesco this morning buying wine at 8am!)
  • Some rosemary, bay leaves and thyme (handy when you have a herb garden!)
Put all into the slow cooker, mix it up and bit and then turn it on and leave. I left it to cook for 8 hours on low.

Great for freezing for handy nutritious meals on the fly. Just take it out for defrost and then warm in a pan. Or if you forget like I often do, you can gently cook from frozen in a pan with the lid on. Not sure whether you're really supposed to do this, but I do all the time!

Would be lovely with a dollop of horseradish, but I had run out.
